Pre-Event Prep

1. Cut each onion in half from top to bottom and remove the papery, outer-layer.

2. Cut the top and bottom off of each onion half and discard. 3. Finely dice all onion halves and place into a plastic storage bag and store in the mini refrigerator.

4. Cut the leaves from the stems of both bunches of cilantro and discard the stems.

5. Finely chop all of the cilantro leaves, place into a plastic storage bag, and store in the mini refrigerator.

6. Wash hands and change gloves.

Juanita’s Menudo Soup

1. Empty 4 cans of Juanita’s Menudo into the multi-cooker. 2. Set the heat to 350 F and heat for 10 minutes or until lightly simmering.

3. Use a thermometer to ensure that the temperature of the soup has reached 165 F. If the soup has not reached 165 F, continue cooking in 2 minute intervals.

4. Reduce heat to warm.

5. For each sample, pour 1/4 cup of soup into a Styrofoam cup and serve with a spoon.

6. If Shoppers request, add any of the following to their sample:

• 1/2 tsp. onion

• 1/4 tsp. cilantro

• 2 drops lime juice

• 1/4 tsp. oregano

Discard samples after 15 minutes.
