Research Experience

Master’s thesis was based on the extraction of oil from potato chips using supercritical carbon dioxide. Extraction was carried out at different pressures and the fatty acid and triglyceride concentration of each fraction was analyzed using Gas Chromatography. Comparisons were also drawn between single stage and multi stage extraction. Currently continuing the same work using butter as the substrate. Submitted an abstract to the Journal of Food Engineering and would be publishing my results shortly.

Product Development

Member of the Danisco Product Development Team where we worked on veggie leather and responsibilities included the formulation of the product, its manufacturing, labeling, packaging and pricing. Also worked on products such green-tea based salad dressing and smoothies
