The primary objective was to revamp and rebrand a well-known established upscale dining venue. Touching on French Polynesian style with southern Mediterranean and Pacific Rim influences. We were able to change the paradigm of the atmosphere and bring in a new clientele base. Sales increased by over 47.5%. Menu design, Food cost analysis, reduction of inventory and waste, Labor controls established, to minimize labor and increase productivity. Training procedures and practices were better established to promote growth and tenure. Overall great place and dining destination to be part of. Harborside, sunset waterfront dining. Selected as top 10 destinations in dining in 2016, Top 10 Chef award for 2016 from FRLA.
