Responsibilities at the stadium included designing and logistics for

banquets for alumni and suite seating at Rice Eccles stadium. Banquets

were generally designed for about twelve hundred persons. I was in

charge of three other chefs and we made a custom menu for every event.

I was responsible for all purchasing, inventory, food costs, quality

assurance, and menu development. I was also in charge of assuring that

the service teams were prepared and trained.

Responsibilities included hiring and training of all front of house staff.

Scheduling and labor cost controls. End of day accounting. Bar

purchasing, inventory and bar service controls in accordance with DABC

mandates. Ensuring daily sideworks were completed as well as any

necessary facility maintenance.
