JOB DESCRIPTION
Sponge and Dough Mixer Operator
To perform mixing process and operations conforming to quality standards, thus producing a sponge and dough that will meet manufacturing requirement.
Coordinates with the Ingredients Preparation Personnel on withdrawal of ingredients assuring its correctness and completeness.
Assessing the characteristic and condition of dough conformance to standard parameters.
Responsible in recording of process parameters used in mixing process and proper filling up records, significant to sponge and dough mixing.
Immediately inform production Supervisor/QA Staff regarding problems encountered during the process and within his area of responsibility, cross contamination dough inconsistency, and machine breakdowns.
Perform proper cleaning of equipment’s and machines used within area of responsibility.
Perform all assigned task in accordance to GMP.
Perform all other task that may be assigned from time to time.
Make up Line Operator
To perform operations on makeup line that includes dividing, rounding, intermediate proofing and molding, thus producing dough pieces conforming to standard weight and mold.
Assessing dough consistency and coordinates with sponge and dough mixer operator if it is conforming or not.
Assures conformance of dough weight to standard parameters.
Assuring conformance of dough molding characteristic to standard parameters.
Responsible in recording of process parameters used in make-up process and proper filling up of records relevant to make-up line.
Perform proper cleaning of equipment’s and machine used with in the area and responsibility.
Immediately inform Production Supervisor/ QA Staff regarding problems encountered during the process and within his area of responsibility, machine breakdowns, dough inconsistency and cross contamination.
Perform all assigned task in accordance to GMP.
Perform other task that may be given from time to time.
Oven / Final Proofer Operator
To perform proofing and baking operation procedures in accordance to standard and thereby producing baked loaves conforming to standard color, texture, size and shape.
Coordinate with make-up line operator regarding condition/characteristic of molded and baked dough.
Ensures all machines are operational before start up.
Make sure that proofed dough conforms to standard height and width.
Ensures that baked loaves conform to standard size, shape, color, temperature and texture.
Perform the necessary cleaning for machine/equipment’s used within area of responsibility.
Immediately inform Production Supervisor/QA Staff regarding problems encountered during the process and within his area of responsibility, machine breakdowns, dough inconsistency and cross contamination.
Responsible for proper filling records significant to final proofing and baking.
Performs all assigned task in accordance to GMP.
Performs all other task that may assigned from time to time.
