My name is Carlos Roman I am a motivated, high-energy professional with a wealth of knowledge and experience in the restaurant, food and beverage industry with a career spanning nearly 30 years. I have spent my adult life in restaurants, from server at some of the finest restaurants in New York City to captain, to sommelier, to manager then Restaurant Chef and Owner.

In 2011 I opened my first restaurant, Vinoco Wine Bar and Tapas Restaurant in Mineola, New York. Over the past eleven years, Vinoco’s unique and creative menu garnered a 4- Star restaurant rating on Yelp and Google Maps. As a favorite in the Town of Mineola, Vinoco was featured in The New York Times, The Daily News, on Fios TV and was listed in the top 5 tapas restaurants on Long Island. I have been featured on CBS TV. In 2016 I opened my second restaurant, Vinoco East, in Farmingdale, New York. Vinoco East was an evening hot spot in Farmingdale. The drastic business hour restrictions during pandemic forced the closure Vinoco East. Vinoco Tapas and Wine Bar in Mineola has also become a victim of the Pandemic and the high cost of running a restaurant because of inflation.

My passion for the restaurant industry has not waned. My desire to wow customers with my creativity and unique menus is as strong as ever. I am excited to start this new chapter in my life. I am seeking to share my experience and creativity with the right establishment.
