Officers’ Club, Assistant Manager

Manage staff of 50 restaurant, banquet and operational staff in a busy, multi-event environment.

Oversee and supervise the Topside restaurant, four banquet rooms, and special events that run simultaneously in one event property. Five separate functions may be overlapping daily at The Officers’ Club venue. Total revenue to 2.5M.

Design, create and implement new restaurant menu. Result is lower cost of goods and an increase in revenue.

Interact and collaborate with senior management on base – Naval War College, Naval Prep School, Graduate schools – to plan functions, events, retirements and school graduations; Ensure that the event runs seamlessly.

Expanded restaurant presence on the “Best of Newport” Officers’ Club waterside deck and Tiki bar. Summer music weekly.

Created new outdoor summer deck and a diverse bar menu, added lawn seating, guest waiting areas and a new fireplace to the expansive outside deck. Deck is currently in the midst of a 4000 Square foot addition to be launched in May 2016.

Supervise at Morale, Welfare and Recreation(MWR) events during the year - our Easter, Mother’s Day and Thanksgiving dinners, along with Children‘s Christmas, Halloween and Disney Character buffet for service members and retiree families.

Coordinate our staple “Salute to Summer” concert and fireworks event on Dewey Field overlooking Newport harbor and the Newport bridge. Also, our annual sprint triathalon and golf tournament in the summer.

Designed and implemented winter programming and entertainment ideas to gain patronage and increase winter revenues – our fourth(4th) annual Comedy night series(bi-weekly), along with Mardi Gras and Saint Patrick’s Day specials and themes.

Instrumental in starting and coordinating our popular “cigar and whiskey nights” event. Our beer dinner and wine tasting dinners are popular, as we collaborate and partner with local breweries and wineries to promote our products and services.

Vanderbilt Grace Hotel - Newport, R.I. February 2010 – July 2011

Manager, Dining Room and Hospitality Services

Oversaw the full daily operations of a fine dining restaurant in an elite Four Star Hotel.

Responsible for the ordering and procurement of china, flatware, glassware, and linen for a major restaurant renovation and innovative change in high-end dining concept.

Designed, created and implemented a new training manual to manage the training /guidelines for staff. Included were new policies for recruitment of employees – hiring, termination, compensation, benefits, etc.

Exhibited strong leadership, communication and customer service skills to build rapport with guests and maintain relationships with vendors, employees, and management personnel.
