Working in the buffet kitchen my duties were included the breakfast, lunch time and dinner. For the breakfast I was responsible to help the first cook to prepare the breakfast such as: taking fresh eggs, liquid eggs, loading trays of food from the blast chiller to the oven, defrosting bacon, sausages and arranging all the food in fancy trays for the buffet boys to bring to the buffet line.

Always using the appropriate knife for the Mise en Place. On lunch time could not be different I was there to help the second and the first cook to handle the massive amount of food that arrived from another decks, putting the food in the containers and inside the oven at the correct temperature. I was always in alert for some solicitation from the buffet boys, giving to them hot, nice and presentable food.

I used to fry a lot of items as French fries, crocket, pakora, fried fish, calamari, mussels, tempura, onion rings, sunny up egg and omelette.

At dinner time I was the carving man. Cutting all kind of meats for the rigorous passengers. Smiling and greeting them all the time.

Responsible to write labels with specified date, location of preparation, and the hours allowed to be outside of the oven or freezer.

Cleaning and sanitizing all the benches, tidying up the dry storage and ordering new and fresh ingredients in case they were running out.
