At **, I starting off as shift cleaning janitor. I moved into restaurant work by 18. The dish pit, as we lovingly called it. Cleaning house top to bottom, in the busiest Denny's in California, or so I was told. "California Cuisine", became the catch phrase of the late eighties and early nineties, for newly opening restaurants. I was drawn in by the focus on uncommon produce, game meats and organic farming methods, they were applying. For me, California Cuisine was international food, reinterpreted by Chefs who had been classically trained in regional world food. It was still mostly French or Italian spooked by a Southwestern chili pepper and given a new name. On the central coast, through the 90's I worked along a chefs from Chez Melange, now Bouzy Gastropub. Following up with opening a Central Coast Italian restaurant, Buona Tavola, with Chef Antonio Varia. Antoni, hailing from Piedmont Italy, by way Locanda Veneta restaurant in W. LA.

By the 2005, I returned to college, studying for an AA in 2D-Studio Art and design. During college I worked at the best restaurants and resorts in the San Luis Obispo area. After graduation, I opened an event based catering company. Serving small groups up to one hundred. Working closely with wineries for ten years, as they developed their brand. Catering services with off site preparation, drop off and seated, plated service suggested. We also liked to enter food challenges to market our name.
