JOB &Responsibilities

Responsible for Asst.Chief Steward, Supervisors and Stewards.

Directly report to Kitchen Director. (Executive Chef)

Responsible for the day to day running of the Back of house operations,

Supporting the kitchen and the operational outlets Following basic food hygiene and safety .

Consistently maintaining high cleaning standards in all areas.

Training and coaching on a regular basis to maintain consistency and the morale of the team.

Ensure all associates are trained and follow the health and safety procedures of the Hotel and are all aware of the fire emergency procedure

The team must be trained on cleaning standards for each and every equipment within the back of house area.

Daily checking of all the Back of House areas along with each respective Managers.

Implementing, maintaining & reviewing cleaning standards within the building

Maintaining a minimum of kitchen supplies & chemical supplies

Weekly spot checks with the night cleaners in all Back of House areas.

Daily check of pest control areas, and ask the assistance of housekeeping dept. for immediate action.

Daily check of any malfunction equipment's and broken items and report to the Executive Chef and the engineering department for immediate action.

Assisting Executive Chef in producing the weekly maintenance report for the chief engineer and follow up on issues.

Assisting all F&B Head of outlets for daily operations especially with regards to hygiene issues.

Follow strict Municipality procedures in terms of health & safety & basic food hygiene

Ensuring that good environmental practice is in place and maintained.

Immediately resolve issues, concerns and complaints.

Checking and planning day to day functions internal or external activities and discuss with Chief Stewards & Supervisors

Daily Checking of all kitchen outlets as per standard checklist.

Monthly meeting with Chemical supplier in regards to training and equipment issues

Planning of equipment & manpower required for each outside catering & in house functions

Praise good employees and results in public and coach in private

Making and planning of yearly vacation plan

Develop the team, formal & informal reviews & appraisals

Immediately resolve issues, concerns and complaints
