Being very fortunate I got a job offer right away to work at La Esperanza Restaurant as a Head Chef, it was a challenging and rewarding position since the food style was “Fusion / Alternative “cooking with local organic produce. Living in Mexico City was an exciting experience, I had the opportunity to work as a Chef in Lunas Restaurant since day one. Menu had an influence from Yucatan (a southwestern state in Mexico) with a Gourmet touch. I was also in charge of staff training and managing Menu with new dishes to keep up to date with the competition.
