Dear Tom Bull,

Being a hands on veteran of the hospitality industry that has a great passion for food, getting a team to work in a cohesive fashion and respect for each other and operation, I was very interested in the Executive Chef position within this company.

My goals are aligned with success of the company.

1. Consistently evaluated food and labor costs and even building schedule templates to evaluate FTE base to weekly budget to reduce overtime and labor costs to within/lower budgeted costs with savings of $100-150,000 from prior budgets while increasing overall satisfaction.

2. Created seasonal menus, with food allergen awareness, using all products to fullest potential.

3. Consistently raised sanitation standards and accountability of team by constant training and rotational scheduling of team to work together for fairness of job duties.

4. Raising customer satisfaction scores in each operation with proper training of technique and feedback to team in how to improve consistency in execution and empowering team to take pride in what they do.

5. Having worked with budgets of up to $4.65 mil, purchasing and inventories are controlled to daily ordering for minimal waste.

The opportunity to move to this area and work with a professional team like I have been previewing is not a step back but, a step in new adventures. The opportunity to work in an area with regional ingredients is so different than Florida. Menus and pictures of food are available for your perusal.

With the event of Covid-19; my company has released 8000 employees, leaving me with the ability to relocate and get back into free standing restaurant dining. My wife and I have the ability to move anywhere with our home base taken care of. Having worked in fine dining from hotels to 3 Star NY Times restaurants, I have a lot to bring to the table for quality and structure.
