Responsible for execution of a large volume of high-end dishes as well as making sure service is executed collaboratively and smoothly each day. ZITZSUM, MIAMI — LEAD COOK [ January 2020 – Sept 2021 ] Preparation and execution of dishes created in collaboration with Chef Pablo Zitzmann. Responsible for maintaining counts, pars, and the ordering of ingredient for the entire restaurant. Part of the opening team for the James Beard award winning chef and his restaurant located in Coral Gables. NAVE, MIAMI — LINE COOK [ November 2019 – March 2020 ] Garde Manger cook for the restaurant's opening team. Responsible for keeping the raw bar stocked with shucked oysters and clams, as well as salads and cold starters. This restaurant was part of Ariete Hospitality Group before its closing. ARIETE, MIAMI — PREP COOK [ May 2019 – November 2019 ] Full time prep cook under Chef Michael Beltran. My team was responsible for preparing dishes to be served for Ariete, Chug’s, and Lena with weekly additions to the menu.
