My responsibilities ranged with everything from opening to closing. Working long hours from 10am to 1-2am. I also have smaller responsibilities like doing the chalk boards that feature our seasonal beers. And bigger ones like training the fresh hires as servers. Of course the closers duties are to make sure everything is put up and clean as possible. My kitchen background helps immensely with that as I was always a closer. As a line cook working for The Winchester I was in charge of all the food prep as we were a scratch kitchen. Making everything from the aioli dressings to the hand cut bacon. Usually with a 1-3 man crew, so there’s was always something to do. Along with prep, we also were the dishwashers, or as I like to call them, ‘’Aquatechs’’. I learned everything I could about cooking from this place, as the cook in charge was a CIA honorary graduate and gladly put me under his wing, seeing my persistence and want for growth. After he left the place sadly was not the same and the responsibilities were nowhere to be seen, for that I left. I like structure in an establishment. Note: Was a Keyholder just 6 months in at 19yrs.

As a Hostess at snooze I was in charge of a two hour waitlist. Making sure the guest could somehow still be happy while waiting X amount of time. Really got to hone in on my people skills, being the first person the guest would speak to when walking in. Coordinating when and where the guest will go and knowing which servers can handled the heat of multiple tables. As a Cook I was the one flipping 200 pancakes in under a hour, maybe more on the brunch rushes of Friday-Sunday. An absolute nightmare but a needed organization builder. Prep was minimal due to the already staffed prep cooks. Was definitely the fastest moving kitchen I’ve worked in.

Line Cook 02/2021 - 11/2021

At Mama’s Cafe I learned a lot more about the food and restaurant industry. Seeing first hand how a fast paced, high quality and functioning scratch kitchen worked. My responsibilities were setting up the line in the mornings. Cutting everything that day and sometimes to the order as freshness was our main focus. We had meetings every week, coming together to see how we could make the environment better and faster. I got more knife skills than I ever thought I would. Even teaching the guys there how to make the most beautiful creations out of an avocado. Closing there was a privilege as it was the cleanest kitchen I have ever seen. Hoses on each wall made cleaning a breeze, while a long drain lined the floors, making the little gunk we had just disappear. Each night was a deep clean at that place. The floors were dowsed with enzymes each night to maintain their strength. Loved learning what a clean kitchen looked like at that place. Skills
