I hire, train, discipline, in-service and schedule all dietary staff. Assist in creating 5 week cycle menu. Order supplies from approved vendors while maintaining budget and controlling food costs. Maintain sanitation regulations and prepare for quarterly inspections. Assist in every meal service. Keep records of temperature logs, cleaning lists, diet orders, etc. I organize every 6 months a new cycle menu making sure all recipes are available, spread sheets, production sheets, temperature logs and RD approves and then we initiate.
