DUTIES AND RESPONSIBILITIES

Preparation of monthly food cost report & sending it to top management

Preparation of monthly staff food cost report & sending it to top management

Detailed Checking of the invoices against the purchase orders and approving the GRNs and handing over to finance office for the payment

Maintaining a detailed record of daily diesel and petrol consumption and preparing a detailed record of cost center wise fuel cost

Responsible to finalize the store wise closing inventory value which included in final accounts

Initiating necessary actions to minimize the food and beverage cost by closely monitoring items issued to outlets daily basis

Preparation of various analytical reports on request of CFO

Carrying out spot inventory checks in different bars and kitchens

Responsible to supervise the store team in conducting monthly inventory count and closing of inventory management system

Carrying out menu costing for different menu items in the event of when there is new addition to the existing menu in the process of determining the selling price and updating the micros key.

Coordinating with executive chefs to obtain recipes for all the menu items and conducting menu item costing and update in the system accordingly to minimize any possible inventory variances.

Supporting the chief accountant in preparation of month end JVs and finalizing monthly inventory reconciliation.

Coordinating with storekeepers to maintain Reorder Level quantity for the smooth operation

Giving weekly updates to each cost center in charge regarding the costing of specified center

Conducting meeting with storekeepers to make awareness to them regarding their cost center

Conducting special meetings with cost controllers of divisions, in which inventory variations are showing (Asking to give written explanation on each variance)

Giving the ideas to cost controllers to do proper control on food and non- food items

Follow-up with all the suppliers if any issues in delivery that leads to credit note or debit note

Seeking ideas from chef side also to apply more control to leads to more profit

Interact with internal and external auditors in completing audits.

Updating all the menu items in MICROS
