Perform microbiological analysis on finished/raw products for

the detection of microbes according to SOPs. Processs

environmental samples (sponges and swabs) for listeria species.

Process weekly monitoring swabs for TPC. Process finished

samples for TPC via Petrifilm for the detection of E. Coli,

Coliforms and Staph.

Report results of tests according to colony count and

antibody/antigen complex strips via excel, listeria database and

SAP. Perform yeast and mold testing as needed per client request

and any other specialty test requested.

Occasional microscopic analysis and gram stain preparation.

Streak plates onto XLT-4 for presumptive positive of Salmonella.

Perform free fatty acid check on oils several times a day,

perform acid/base test to determine FFA percentage. Prepare

media as needed: peptone, SMA, Listeria enrichments and

supplements containing antibiotics and/or phage.

Detection microorganisms are Total Coliforms, E.coli,

Salmonella, Listeria and Staphylococcus, TPC. Perform monthly

correlation/proficiency tests with unknown samples via an

outside company.

Maintain all equipment in the lab and keep all log records up to

date, including temperature and maintenance. Followed all cGMPs

as set forth from company to ensure validity of data and quality

of product. (i.e. strict record keeping, hygiene standards,

aseptic techniques) Followed all compliance rules for USDA.

Performed other projects as requested from Supervisor such as

reporting trends via excel.
