Launched an upscale artisan hot dog take-out operation that would dominate
Chicago's Loop area and gain fame throughout the restaurant industry for
food quality and service. Ultimately launched a second unit and divested
at a profit within a year.
o Drove combined revenues past $600,000 a year, serving up to 250 guests
daily and boasting of a 20-minute queue for service during lunch. Grew
revenues by 15% annually.
o Runner-up in the Best New Product contest, an artisan-made sausage
sandwich, sponsored by Metro Mix restaurant review, placed second to
famed celebrity chef Graham Elliott.
o Featured for food quality and preparation by Chicago Magazine, Crane's

addition. Noted for producing Gourmet fast food.
o Oversaw the facilities build-out and remodel, including personally
contributing design features to optimize output during rush hours.

Cubs fell from a playoff contender to the bottom of the league, and game
day revenues dropped by nearly $6,000.
