Currently working on a project on development of soy based products as a
part of my
B.Tech course curriculum
-Preparation and proximate analysis of soy milk, physicochemical
properties, and its shelf life study. Preparation and study on fermented
products like yogurt. Preparation of tofu. Study on soy protein isolate.
Elimination of the characteristic beany flavor of soy and reduction of its
antinutritional factors. Product development through process condition
optimization using statistical quality control tools. Preparation of
artificial milk using soy protein.
