• Furthered the procedural process of obtaining Maillard Reaction products and analyzing the similarities of the melanoidins produced by monosaccharides and disaccharides via 1H-NMR spectroscopy and Principal Component Analysis
• Procedural process and analysis was repeated with various flours of different protein compositions in order to determine similar trends as seen with the monosaccharides and disaccharides
• Presented findings through poster presentation at the North Central College Rall Symposium (May 2013
