I worked closely with ownership and chef partner to build out and open a new concept in the hip Wicker Park neighborhood of Chicago. In this position I work with Chef Bryan Moscatello (responsible for food cost) to develop the dinner menu and custom cocktails based on a farm cuisine, modern cooking approach. As a Sommelier, I buy and manage all wine, liquor and beer (24 percentage sales). My General Manager responsibilities include processing and managing payroll (19 percentage sales), hiring and training employees and managers. Additionally I manage expenses and consumables. On a monthly basis I meet with Wagstaff PR to discuss and implement strategies and tactics to help the media drive customers to our restaurant. My daily goal is to touch every table that dines with us. We recently received Michelin's Bib Gourmand status.

I'm the owner of a great wine shop that has taken on a life of its own. In less than two years I've managed to drive sales higher than a wine shop down the street that's been open for 5 years, (they are now going out of business). This was accomplished by hosting innovative tastings, successfully marketing and promoting a lucrative wine and chocolate pairing promotion. Additionally, by listening to my customers, we've expanded our craft spirits and craft beers which now account for over 25 percentage of sales. Finally, I hired and trained the right people to run the business while I'm absent.
