The purpose of this project was to develop new technology that allows effective delivery of nutrients,
bioactive compounds, and sensitive ingredients through food systems. In this research soy oil was
effectively encapsulated in a wall system by using a spray-drying process.
Major activities included:
• Emulsions preparation and spray draying.
• Emulsions and powder analysis.
• In addition to the lab work I calculated, analyzed data, and prepared reports.
Project: Recovery of Bioactive Plant-Derived Compounds:
The purpose of this project was to find efficient extraction method that preserves bioactive plant-derived
compounds.
Major activities included:
• Extraction and separation of bioactive compounds.
