Supervise experimental pilot plant production runs. Conduct routine microbiology testing on finished product samples. Manage all
documentation relating to production runs and experimental data.
• Routinely designed and performed inoculation studies, microbial challenge studies, validation of rapid detection methods,
pathogen testing, equipment calibrations and other common microbiological methods. Familiarity with such a wide range
of techniques facilitated collaboration on multiple projects at any given time.
• Familiar with HACCP, GMP, and GLP requirements and document keeping practices. The continuous application of these
principles facilitated use of the Center’s pilot plant to produce food for human consumption.
• Devised a lab-scale fresh produce wash flume to study the transfer of Salmonella during commercial tomato washing
operations. The design resulted in a significant cost savings by consuming ten times fewer tomatoes, water, and sanitizer
as it would have in a pilot plant setting. Reported directly to FDA scientists during this project. The data collected during
the project will result in new FDA guidelines for tomato washing operations.
• Coordinated with industry stakeholders and FDA scientists to develop microbial challenge studies and finished product
storage studies for the Dual Use for Science and Technology (DUST) project. This project led to a new process filing with
the FDA in 2009 and won an innovation award from the Institute of Food Technologists (IFT) in 2009.
• Validated a new ultraviolet reactor design for use in the pasteurization of tropical fruit juices. The validation report al-
lowed the client to move forward in bringing cold pasteurized products to market.
• Performed installation, operational, and process qualification on the center’s multiple lid retort thermal death time system
(TDT.) The qualification procedure revealed several minor software glitches and required the re-tuning of a PID controller.
• Gave oral presentations at five IFT expos and one UV World Congress.

Perform total plate counts, pathogen testing, endotoxin testing, media fill and release, and various physical tests on in-process and
finished samples of products refined from corn. Prepare and submit reports, protocols, and standard operating procedures
• Extensively surveyed dry starch operations over a one year period to locate the source of non-pathogenic gram negative
contaminants in finished product samples. The resolution of this issue allowed the company to retain one of its largest
customers from the pharmaceutical industry.
• Constructed a computer database for the tracking and reporting of food-grade dry starch microbiology data. This system
allowed batch release data to be reported to the sales team without delay.
