Became employed when Decker made their expansion in 1971, worked as a

maintenance man for two and a half years. Became Maint supervisor, then

maintenance manager. Oversaw all equipment purchases & installations

including Ammonia refrigeration. Had a full time delivery and

manufacturing, production facility including smokehouses and pickling

procedures under USDA inspection. Had 25 maintenance personnel. Operated a

24/7 operation. Was in the Amalgamated Meat cutters Union until I became a

part of management. We done all of our own support & design concepts

ourselves answering to the plant manager, & Greyhound corporation.

1976-1980 Bridgeford Foods Dallas, Texas

Maint Manager:

Overseen all the maint and sanitation operations for a frozen Bread dough &

pastry operation. We had spiral blast freezer operations as well as

formulated layer freezing.

We utilized heat ovens as well as mixing and extruding operations including

proofers.

We utilized all of our flour dispensing and cooking operations under USDA

controls.
