July 2008 to April 2010
General Manager - Hired by the developer of Marina Shores at Dune
Harbor to operate a casual seafood concept restaurant including a 140 seat
restaurant and bar, 32 seat patios, 60 seat entertainment lounge, and 120
seat banquet facility. Responsible for all day-to-day operations including
developing business operating policies and procedures for restaurant and
club, food and beverage menus, banquet operations, entertainment booking,
and POS administration.
Restaurant Management Consultant
September 2005 to July 2008
Working consulting manager developing business operating procedures and
policies, menus and standardized recipes, and service training manuals for
various restaurants including a new Irish pub theme restaurant, and a
multiple food venue ice arena complex. Also assisted the owner of a 13,000
square foot, 300 seat upscale casual dining restaurant and working winery
($4M annual sales) on a one year project from final construction phase
through start-up and initial six month operation.
Victor Walker's Restaurant, Orland Park, IL
August 2002 to August 2005
General Manager - Hired by owners to assist in purchase and conversion
of a local 150 seat restaurant to a new gourmet breakfast and lunch
concept. Responsible for all day-to-day operations. Projects included
developing business operating procedures and policies, budgets,
marketing/advertising plans, and purchase/installation of P.O.S. system.
Business sold in fall of 2005.
Crystal Tree Golf & Country Club, Orland Park, IL
December 1997 to August 2002
An exclusive, 425 member, gated community club featuring a Robert Trent
Jones II Signature golf course. Amenities include an 18-hole golf course,
swim, tennis, and exercise facilities, French country style clubhouse with
pro shop, locker rooms, dining rooms, grill room, card rooms, and snack
shop with seating capacity of 225 and staff varying seasonally from 50 to
75 employees. Gross dollar volume - $3.5 million; Dues Volume - $1.8
million; Food & Beverage Sales - $1.1 million.
Club Manager - Total management of club operations including food and
beverage operations, pool and tennis facilities, administration and
clubhouse maintenance; reporting to Board of Governors and Committees;
install club accounting/point-of-sale computer system; instrumental in
guiding Board toward a club membership director program and development of
new membership classifications; improved member food and service
satisfaction level and member services throughout club while maintaining
annual budgetary goals.
Willow Bend Country Club, Van Wert, OH
October 1996 to December 1997
A corporation owned country club featuring a newly constructed 16,000
square foot contemporary clubhouse with pro shop, locker rooms, meeting and
dining rooms seating 350, and a staff anticipated to vary seasonally from
30 to 60 employees.
Interim Manager - Hired in October to oversee final construction phase
and to ready new facility for opening. Successfully opened facility in
seven weeks on Thanksgiving Day, 1996. Purchased all clubhouse, kitchen,
and dining room equipment/smallwares. Hired and trained kitchen, dining
room and clubhouse employees; developed and implemented menus, employee
policies, handbooks and personnel procedures, and programmed P.O.S.
system. Assisted parent insurance company in establishing budgets,
accounting procedures, membership drive promotions, member special events
and newsletter.
Stonehenge Golf Club, Warsaw, IN
November 1992 to October 1996
An exclusive, 420 member, family-owned and operated golf community
featuring a Ron Garl Signature designed, links style course, ranked fifth
best course in Indiana in 1993. Amenities include 18-hole Championship
course, 9-hole public Executive course, practice facilities and pool; an
English Tudor clubhouse with pro shop, locker rooms, grill, golf snack
shops, meeting and dining rooms seating 300 and a staff, varying seasonally
from 40 to 75 employees. Gross Dollar Volume - $2.0 million; Dues Volume -
$0.8 million; Food & Beverage Sales - $0.7 million. Club sold to club
management firm in December 1996.
Clubhouse Manager - Management of all aspects of clubhouse, swimming
pool, food & beverage operations, and administrative functions of the club
to assure maximum satisfaction within club's financial capabilities;
reporting directly to owners; improve controls and efficiency of clubhouse
operations; provide owners with annual budgets; selection and installation
of club accounting software and point-of-sale system; update member by-
laws, club policies and operating procedures; club director of an annual
club fund-raiser, the Labor Day Pro Charity Classic Tournament, featuring

Amenities include a contemporary colonial clubhouse with pro shop, locker
rooms, grill, golf snack shop, practice facilities, lounges, meeting and
dining rooms seating 350 and a staff, varying seasonally from 60 to 130
employees. Gross Dollar Volume - $3.2 million; Dues Volume - $1.1 million;
Food & Beverage Sales - $1 million.
Clubhouse Manager - Management of Food & Beverage operations,
