Plant Manager - Oak Farms Dairy – Dallas, TX: Responsible for managing

production operation for plant producing volume of 4 million gallons per month.

• Responsible for all activities in milk receiving and production of fluid milk

products.

• Supply skim milk for cottage cheese operation, soft serve mix batching and

filling operations.

• Cleaning/sanitation operations of all equipment associated with packaging.

• Responsible for coaching and development of supervisory and management

personnel for all production operations.

• Review and approve all production department expense invoicing.

• Accountable for Market Report information.

Plant Manager - Oak Farms Dairy - San Antonio, TX: Managed operations for

Production Manager: Managed production activities in milk receiving and

production of fluid, Sour Cream, Cottage Cheese, and Ice Cream operations

which included accountability of Market Report information and clean up of all

processes.

Ice Cream Production Manager: Responsible for ice cream production

operation. Responsibilities included scheduling, raw batching, packaging, clean

up, storage and load out activities. Scheduling of preventive maintenance for

packing equipment. Accountable for Over/Shortage reporting of all Ice Cream

production activities.

Milk Production Superintendent: Oversee operations for production of fluid

milk product. Emphasis in the finishing in daily production packaging and clean

up of all operations involved in HTST’s (High Temperature Short Times), to

silo’s, lines and batching equipment.

Quality Assurance Manager: Responsible for managing lab personnel and all

lab testing and activities. Monitored all quality processes from receiving of all

raw ingredients, packaging material, product formulation monitoring, internal

inspections, involved with regulatory inspections and training of clean up

processes.

Quality Lab Manager: Managed daily laboratory testing which included but

not limited to receiving of raw milk, raw product batching, pasteurized

compliance testing and performing lab procedure monitoring.

Production Accounting Clerk: Responsible for producing Production scheduler,

Daily Factory Report (overage/shortage) and Raw Milk balancing reports.
