Work Experience:

2005-2010 Café Copenhagen, Jupiter, Florida

Owner/Operator: As the owner and operator of this 60-seat full dining restaurant, I was responsible for the creation of the concept as well as its execution. Besides being the chef, I managed all of the aspects of the restaurant. During the five years of operation, revenues increased supported by a loyal customer base. The restaurant was open for breakfast, lunch and dinner. The restaurant attracted an high end clientele. The signature dishes were Scandinavian but were also infused with European and American inspirations. I created a unique and worldly full wine list.

2000-2004 Marisol Country Club, Palm Beach Gardens, Florida

Food and Beverage Manager/Chef/Purchasing Manager: As part of the key management in the start up of this country club, I was involved in the creation of the dining venues and bars. During my tenure, I was the chef as well as the Food and Beverage Manager, which included the all purchasing responsibilities for the dining room, spa, and golf shop. The club hosted many events including the first Honda Classic. The club has three dining rooms, with the main venue seating capacity of 500. Banquets and weddings were also provided for up to 1,000 members.

1996-2000 Opened and managed Quarterdeck Restaurants in Davie, Sawgrass Mills, and Jupiter, Fl. Responsible for the build out of the interior restaurants, hiring and training of all staff, payment of all invoices and bills, inventory, and profit and loss reports.

1993-1996 Chef at Erny's in Delray Beach, Fl which is an upscale jazz, blues, and big band dinner club. Responsible for creating menu, hiring and training of the staff, and all purchasing.

1987-1988 Belvoirpark Hotel and Restaurant Management School, Zurich, Switzerland

This school which is part of the International School of Business Management is certified by the Swiss Education Qua. They provide state of the art education in restaurant and hotel management as well as extensive training in the culinary arts.

2008-2010 Landmark Education – Team Management and Leadership Series

Interactive courses specializing in team building and sustaining teams. I have progressed in the courses from attendee to coach.
