Dec 2009 - May 2012 Quality Assurance Manager - Implementing SQF, FSMA & Food Defense Plan for Wawa Dairy. I performed vendor certification audits of Wawa co packers including poultry, meat, cheese, bakery, and produce and packaging plants throughout the United States. I was the QA Liaison to Wawa’s Product Development team working on new sausage, pork roll, egg patties, and biscuit and cheese reformulations for the breakfast sandwich product line. I facilitated consensus decisions between plant operators and the marketing department to deliver finished products within budget without sacrificing quality standards.

Jan 2008 -Nov 2009 Commissary QA Manager - Manage QA & food safety at new Central Commissary preparing sandwiches, salads & snacks for daily distribution to Wawa Stores. I participated in USDA and FDA audits while on staff at the commissary. I inspected ingredients and managed Corrective/ Preventive Action Plans for vendors not meeting Wawa specifications. I coordinated product sampling and testing. I coached and trained QC Tech’s and line leaders on sanitation and food safety issues. I performed GMP & cold chain audits at DC and validate cold chain deliveries from DC & Bakery. I initiate recalls for DC products.
