I drove a company car and was responsible for over all operations of ten to thirteen contract cafeteria accounts in business in WV, VA, MD, and PA. Responsibilities included; hiring and training employees; menu pricing; helping unit manager on operation issues or problems and giving them the tools or training to help them achieve as a unit manager. This was a contract directors position. I worked for three years under Corporate Canteen Services and one year under Szabo Correctional Services. When first employed, the jail was less than a year old. All duties were accomplished on site at the Eastern Regional Jail kitchen. Totally responsible for: food ordering receiving, weekly inventory, weekly profit/loss reports and documentation, food cost, meal production reports, preparation and pull sheets, recipes, safety and sanitation inspections and documentation reports, state billing for inmates, recording and depositing of state checks for meals served, state commodity inventory, fiscal budgets and quarterly client reports. Hired, trained and supervised employees as well as inmates working in the kitchen. Wrote policy and procedures for food service operations within the jail. Attended many state required in service trainings. Worked with inmates to start and grow a garden at the facility. Consistently scored in the high 90’s on yearly WV Health Department inspections. Trained my replacement for my maternity leave. After my return, we traveled to Flatwoods WV, to open a new jail kitchen .We worked together through opening and starting operations for the new facility that she would manage. Ability to work independently with only quarterly visits from my district manager. Ability to help employees transition from one contract company to another, literally overnight.
