Casa Romantica Cultural Center and Gardens – San Clemente, California

Duties: Directed all private events for this premier Southern Orange County venue. Developed events program in 2003 including, rates, rules and regulations, procedures etc. Worked closely with catering companies that were on the preferred venue list. Responsible for booking $350,000 in rental revenue per year. Initiated contracts and coordinated all aspects of the rental program. Assisted with several in-house events including, cocktail receptions, VIP dinners and annual gala.

2001 -2003

Catering Sales Manager

Laguna Cliffs Marriott - Dana Point, California

Duties: Convention Services Manager, detailing all aspects of group functions including catering, meetings, off-premise events, special events, corporate gifts etc. Laguna Cliffs is a very busy group hotel and this was a very detail oriented position that required great organization skills and people skills. The groups for the most part were sophisticated and demanding and it required patience, quick thinking and decision making skills. I truly exceeded management’s expectations in customer satisfaction and detailing of groups needs and wants.

1999 - 2001

Catering Director

The Sports Club Irvine – Irvine, California

Duties: This position demanded a very broad range of skills to be successful. It included planning events for members that are educated and sophisticated, as well as every aspect of sales, including cold-calling and other solicitation, producing results to meet an ever increasing budget. I managed 8 regular full time sales people in 3 clubs (including two orange county Spectrum clubs) and a catering and café staff of 30 people.

1996 - 1999

Director of Special Events and Catering

West Coast Productions – Santa Ana, California

This has been by far my favorite and most demanding position in catering direction. West Coast Productions was headquarted at the highly acclaimed Bower’s Museum in Santa Ana. I was responsible for managing and directing all of the private in-house events at the Bower’s all of the on-site catered events, as well as all off-premise catering. This included ground breaking events for 2000 guests on sites with no electricity or running water. It included catering for politicians, stars and activists in Orange County and Los Angeles. I was also involved in the catering for all other West Coast Production restaurants including at the OC Performing Arts Center, Newport Beach and Laguna Beach. This job was a huge responsibility and I was very good at it. Our Executive Chef was extremely demanding and didn’t like anyone but he liked me.

1993 – 1996

Director of Catering

Kakaako Kitchen - Honolulu, Hawaii

Kakaako Kitchen was owned and started by Russell Siu an esteemed chef in Honolulu. He trusted me with the upstart of his catering business which included planning, organizing and running a very successful catering operation. I also apprenticed as a cook in this position. The sales in this organization from the time that I began until ending in 1996 went from $75,000 per year to almost half a million dollars per year in three years.

1992 – 1994

Director of Catering

Hyatt Regency Waikiki – Regency Caterers – Honolulu, Hawaii

At the Hyatt I was responsible for starting the Regency Catering division of the hotel which was all of the off-premise catering. The business that was procured included Japanese tourist ship board dinners for 800 guests every night of the week, dinner theatre/comedy for 300 guests every evening and private events in clients homes and in off-premise venues. After two years of sales, the kitchen was maxed out with business and Regency caterers could only handle the business that existed.

1990 – 1992

Bristol Farms – Manahattan Beach, California

Duties: This was my first position as a catering director after having my own small catering company in Hawaii. It included all aspects of sales and direction including, drop-off catering, off premise catering and store events. It was a great introduction to my passion in this industry.
