SELECTED ACCOMPLISHMENTS

Added 24 sites, growing network revenue from $6.2M to $25M. Alliance Management purchased two territories for development of three to five stores per year over five years. Sourced sites, obtained approvals and orchestrated construction process. Obtained financing. Hired/trained staff. Led launch. Grew network from seven to 31 stores.

Turned around failing Dunkin Donuts franchise network, increasing sales 20%. Alliance Management sites had major operational problems. Franchisor pushed franchisee to sell stores. Improved service, food quality and sanitation standards. Heightened training. Obtained satisfactory rating and approval to expand from Franchisor.

Developed major travel plaza conversion process for Marriott. Travel Plaza Division had new contract with NJ Garden State Parkway that required all seven sites to be converted to Roy Rogers and Bob's Big Boy. Developed and implemented strategy for location remodeling and opening. Established standard for Division conversions.

Established cost control system, raising profits 20%. Alliance Management network lacked cost controls. Established cost of goods/wage control package in stores. Instituted weekly inventory assessment. Tracked and reported yield and productivity. Achieved yearly reductions in cost of goods and level labor costs.

Centralized production, reducing costs 25%. Donut products were produced at five different locations in Alliance Management network, resulting in poor quality and high costs. Worked with Dunkin Brands to design and build central production facility. Hired/trained production manager. Facility was recognized as one of best in company.

Led highest volume company-owned QSR launches. Marriott sale to franchisee fell through, requiring Marriott to open Roy Rogers locations as company stores. Assigned two locations. Opened first two weeks after takeover. Supervised construction and staffing on second. Location performed as one of highest volume stores.

Automated cash management system. Geographic breadth of Alliance Management network made it difficult to manage cash, A/P and payroll. Installed server in Central office to maintain data and provide online reporting. Instituted daily checks and balances on cash deposits. Increased efficiency, reducing payroll by two days.

Awarded for on-time opening of new site. Raritan Valley Food Services acquired five units and a new site, the latter needing to be completed in one year. Oversaw development and construction of new unit. Hired and trained management team and staff. Coordinated Grand Opening. Received award as best new store opening for division.

Director of Operations, Alliance Management QSR, 1999-2011. Managed operations, facilities maintenance, finances, personnel, sales and marketing, vendor relations, and central baking kitchen. Oversaw development, construction, remodeling and operations of 31 new Dunkin Donut stores and one Arby’s unit. Responsible for P&L on $28M revenues over 450 employees.

Upgraded franchise network from C grade to A grade with average unit score above 90%.

Developed cost-saving Network operating systems and Ideal Food & Paper Cost program.

Responsible for the development, construction and operation of a Level 3 CML to serve network stores.

Responsible of all hiring and training of store managers and district managers.

Developed manager trainee training, rating and review programs for network.

Managed all marketing, HR, accounting and operations. Responsible for all aspects of administration, financial, human resources, marketing and restaurant operation for the entire organization.

Manager of Food Services, Six Flags - Great Adventure, 1996-1997. Managed multiple restaurant stands and locations. Developed menus and pricing strategy. Oversaw construction of new stands. Managed HR functions for division. Managed 20 Full time/1500 part-time employees, several hundred managers and $27M budget. Responsible for financial, operational, personnel and administrative functions for the entire department.

President/COO – Franchisee, Garden State Food Systems, Inc., 1992-1997. Franchisee of two (2) Roy Rogers Restaurants located in Central NJ. Responsible for all aspects of management and operation of the businesses. Recognized as one of the top Roy Rogers franchise groups in the Northeast.

Director of Restaurant Operations, Raritan Valley Food Services, Inc., 1985-1992. Directed restaurant operations ten (10) Roy Rogers, three (3) Ponderosa Steakhouses and one (1) Ground Round Restaurant with total annual sales exceeding $16M. Responsible for development of all corporate control systems and policies. Implemented all marketing programs and responsible for the opening of new units.

Marriott Corporation - Roy Rogers Division, 1971-1985.

Franchise Consultant. 1982-1985. Responsible for 25-30 franchised units located in Northeast market. Advised owners/operators, developed marketing plans, instituted cost control procedures, improved operational standards, coordinated new product introductions, and opened new units. Participated as consultant to Marriott’s Travel Plaza Division in development and opening of toll road operations along with Garden State Parkway, NJ Turnpike and Atlantic City Expressway.

District Manager. 1978-1982. Responsible for eight company operated units. Opened 25 company units in Northeast market including the first company stores in NYC. Participated in development of corporate drive-thru system, shuttle track system and several other new projects.
