Operations Trainee (July 2008 – April 2011)

During training program following activities where accomplished:
• Learned milk composition, processing equipment and procedures from raw milk to its packing, including: pasteurizers (HTST), and aseptic processing (UHT treatment) in Lala factories (Lala Torreon & Ultra Lala).
• Production Shift Supervisor in Lala Torreon (HTST) production factory while being in charge of 14 people and equipment such as pasteurizers, filling machines (PS-70, Dupont IS-7, and Fogg 287). Producing around 170,000 liters per shift (milk and beverages). Applying STOP security program, GMP s, and other sanitization rules to fully cover the HACCP regulations.
• Supervised and managed Ultra Lala s (UHT) production shift in Milk Processing area that lead to 7% overall shift production efficiency increase while being in charge of 11 people and equipment such as pasteurizers, UHT equipment including sterilizers (Stork, Steritube, Flex), homogenizers:
o Programming production sequence in order to fulfill production and quality goals for milk and fortified milk formula up to 500,000 Lt per shift.
o Daily programming milk receiving sequence in order to meet production weekly and daily basis programs.
o Ensure the full accomplishment of the products quality objectives established in HACCP and STOP security program following all GMP rules, CIP & COP programs.
o Balancing fortified milk formula in order to obtain the best cost-efficient product
• Time and movement studies in Lala factories (Lala Torreon, Lala Guadalajara, SETYLSA, Nuplen Alimentos, Lala Durango) for staff optimization and increasing efficiency that lead to a reduction in factory expenses, increasing profit
• Worked directly with the Operations Director of Lala, supervising, ensuring the fulfiullment of production programs in all 12 Milk factories for Lala Group (Pasteurized and UHT) using SAP and excel documents to calculate daily and weekly basis, which helped factories meet efficiency goals by setting agreements between the different departments involved. By measuring each concept, improved and made the company a more profitable and better source of employment.
