OBJECTIVE: To become an Executive/ Sous Chef at a dining establishment, utilizing my creativity, culinary skills and management experience to provide a memorable and consistent dining experience for a group of discerning and diverse individuals.

EMPLOYMENT: (Acting Executive Chef November 2010 to May 2011-

March, 2008 : Sous Chef - Rockland Country Club: Responsible to

plan, prepare and present a weekly menu of at least ten new entree special meals and several

diverse hot and cold appetizers; salads and soups; in addition to suggesting meals for weddings

and other outside events. Responsible for new and diverse marinades, sauces, remoulades and

other special flavor enhancing compliments. Supervision of a staff of ten, ordering, food cost

efficiency and determination of price points for appetizers, special salads and entrees. Create

special dietary need alternate versions of most meals. Interaction with members to plan events.

Interim Executive Chef November 2010 thru April 2011.

August 2007 to March 2008 : Special Consultant/ Chef at Armando’s of Fort Lee. Assisted with

the update of the menu of this venerable location, adding a catering and pizzeria enterprise

and trained additional staff as needed.

February 2006 – August 2007, Chef and Manager of Classic Café, East Hanover, New Jersey.

Responsible for menu planning, ordering food, supplies and provisions and managing staff in

busy corporate dining location.

August 2004 - February 2006, General Manager of Classic Café, Little Falls, New Jersey.

Completed the final outfitting of a new corporate dining location, attended to opening and then

managing this corporate dining facility.

January 2000 - August 2004, Chef, Campania Restaurant, Fair Lawn, New Jersey. Worked side

by side with Chef Carlo Mennella.

July 1996 - January 2000, Chef, Jerry’s Restaurant, East Rutherford, New Jersey. Entered

the food service business as a waitress, became cook, saute cook, then sous chef.

Prior to 1996, Executive Chef and Chauffer to Nicole, Lindsay and Alison.
