Specialist

Food Service Management
Specialist in all facets of culinary service including menu planning, development, budget planning, and food cost analysis, staff scheduling, purchase request/orders and preventive education (health and safety). Led a staff of 14 in performance of contract food service operation preparing and serving over 5000 meals daily. Approximately 75% of work force had a severe disability of varying types. Managed over 230 drug or alcohol clients, associated case files and databases.
