The Extraction and Isolation of Capsaicin from Various Peppers using UV-Vis (2011)
• Completed at DeSales University under supervision of Dr. Francis Mayville Jr., PhD
• Continuation of previous research in the same area
• Attempted to isolate and analyze capsaicin from 5 different peppers, 4 parts each and relate capsaicin levels to hotness dictated by Scoville scale
• Used Soxhlet extraction with ethanol to extract capsaicin from pepper samples
• Ran UV-Vis Spectroscopy on ethanol/capsaicin samples to quantify results
• Confirmed data from previous experiment
• Some discrepancies found, concluded that sample size largely dictates results
