Food Safety Manager July 2009 – April 2012
Food Safety Manager: Managed the food safety and sanitation functions for the largest privately owned bakery in North America consisting of 14 ovens and 29 packaging configurations. Responsibilities include but not limited to:
• Managed over one hundred employees comprised of four supervisors, six team leaders and food safety workers with the focus on training and developing skill sets to ensure all facility safety guidelines are implemented and observed.
• Responsible for driving the food safety processes, procedures, and systems within the plant’s operational framework by developing, implementing, modifying and maintaining the plant’s HACCP, SOP and SSOP, including allergen controls, and regulatory programs to ensure compliance with all regulatory requirements for the production of safe and wholesome foods.
• Managed and lead all internal and external audits that included national brand customers in the industry such as Kraft, General Mills, Kellogg's, ConAgra, and Pepperidge Farms as well as 3rd party and regulatory audits through AIB, SQF level 3, USDA, ODA and FDA/Regulatory.
• Managed the internal audit control process through a cross functional team involving all department leaders and across all shifts.
• Managed the Prerequisite program to ensure the integrity of our company, customer expectations and regulatory requirements are exceeded.
• Responsible for the adherence and auditing of all policies and procedures involving Food Safety/Quality programs which include allergen controls, SOP’s and SSOP’s and lead a very successful 5S program in our food safety department.
• Managed internal pest control program involving daily facility site inspections and outside service technician liaison. Established root cause and corrective action process to eliminate future issues.
• Engineered and negotiated contracts with outside vendors to provide services including the Go Green recycling program, employee uniform on-line system and several outside services necessary to the facilities daily operations.
• Worked daily with production schedules to ensure timelines for all food safety objectives. Ensure all safety guidelines are followed, reported weekly KPI’s while being a member of the Weekly Process and consumer complaint team.
Major accomplishments include:
• Spearheaded the site's reorganization of the Food Safety Department by reducing costs and efficiencies with annual savings of $650,000 the first year and $450,000 the 2nd year.
• Improved customer audit results by reducing corrective actions by 30% through continuous improvement process.
Food Safety Supervisor July 2006 – July 2009
• Managed over thirty employees with two team leads
• Provided coaching and development for team leaders and food safety workers to assure production and quality levels were achieved.
• Ensured food production lines were clean and safe for production and pre-operational inspections were completed.
• Controlled all inventories of food safety supplies including chemicals and titrations of chemicals.
Bulk Ingredient Logistics August 1989 – July 2006
• Handling purchasing and receiving of all incoming bulk ingredients.
• Conducted testing of ingredients to insure quality specifications were within limits.
• Managed daily inventory and production requirements to insure sufficient levels were maintained.
• General maintenance of bulk sifters, silos, blowers and tankers.
• Purchase and receive all bulk ingredients in excess of 3 million pound per week. Experience with Bulk tankers and general maintenance on sifters and silos.
