I have learned; how to balance LPBE, dive into P&L, provide almost spit on audits every 3 months, daily counts as well as weekly and monthly counts. I over see our food program which intel’s dating, rotating, cook temps, correct assembly of sandwiches, Proper cook times, ordering proper amounts to ensure there are not any out of stocks, and calculating food waste.
