An accomplished food and nutrition scientist, educator, and researcher with almost a decade postdoctoral teaching and research experience in food technology, food chemistry, food analysis, culinary science, functional food product development, food by-products valorisation and the application of cutting-edge analytical technologies to improve food quality and safety. With a strong background in both graduate, undergraduate and key-stages hands-on research and teaching experience, I have led and spearheaded many research projects focused on novel food products development, value addition, alternative protein, and food nutrients optimisation. My expertise also includes application of advanced analytical tools (FTIR, NIR, HPLC, GC-MS, XRD, and DSC) and machine learning techniques for experimental design, food quality prediction and optimisation, structure-function relationship and nutrient profiling.
