While employed at Darden/Ruths Chris my AOR has Changed twice as we rotate rols every six months. I began as the Sous Chef and I currently hold the Beverage Program Manager position. While I was in the Sous chef role I reduced waste by dialing in on par levels, Improved receiving practices utilizing my experience, and ensured hygiene and food saftey were paramount. These were just a few examples at how I maintained an In-line or superior COGS percentage, to which we do inventories weekly in all departments.
During the time I have been the Beverage Manager I have put COGs In-line with the region and maintained it. Once again leveraging my experience by way of team building, audits, and refinement of par levels. We host Wine dinners for marketing and brand exposure I am very involved in the production of these events. They usually range from 10 to 75 guests and are done 3 to 4 days a week. There are many facets to the production of these occasions. Too many to list! This is just an overview and are in addition to my daily operations and employee relations activities that are constantly ongoing.
