Lone Star Bakery, China Grove, TX May 2020 – Present

Privately held commercial bakery company with 2 manufacturing plants producing biscuits, brownies, cakes, cinnamon rolls, fried pies, kolaches and cookies sold to the retail, foodservice and school lunch markets.

Production Scheduler

Responsible for the development and maintenance of the daily production schedules for both 5- line facilities. Reviews and maintains adequate inventory levels per month based on monthly and quarterly sales and customer forecasts. Compiles, generates, and reviews daily production reports, as well as multiple weekly statistical reports for inventory levels, procurement requirements, capacity levels and shortages. Manages and coordinates the transfers, shipments, and capacity levels of off-site storage facility.

Reduced loss due to aging inventory by efficiently scheduling products based on customer trends, forecasts, and historical data.

Effectively managed freezer capacity levels by ensuring proper product rotation (first in, first out).

Inventory Control

Responsible for maintaining inventory accuracy for both facilities through weekly cycle counts, locating and investigating discrepancies and reporting all findings. Manage and coordinate all dispositions of expired ingredients and finished goods within all 5 warehouses. Manage capacity levels in finished goods freezers and dry warehouses in coordination with warehouse management and quality assurance teams. Weekly and monthly statistical reporting of inventory, capacity levels and dispositions to company leadership team. Creation and maintenance of electronic files, spreadsheets and correspondence.

Cleared over 1200 pallet spaces, therefore increasing inventory space.

Documented and removed expired inventory and donated to various food banks.

Receiving Warehouse Supervisor Supervised and coordinated the receipt of product into our warehouse. Coached and trained employees on handling and preservation of items stored, how they are received and how to safely operate all warehouse equipment.
