1. Executive Chef/ Restaurant Consultant

NJ Wine Seller - Green Brook Township, NJ

November 2021 to Present

I am the executive chef for Bar 22 Restaurant & Restaurant Consultant for the Cranbury Inn, Cranbury NJ. This historic Inn is 150 years old with a deep rich history. I was hired to establish kitchen policy and procedures for the back of the house. I was responsible for setting up staffing, training, menu development & cost control. I developed the a la carte menu and Banquet Menus for Parties. I worked closely with the front of the house Management team to establish polices and procedures for the waitstaff with food presentation and delivery to the consumer. As the executive chef for Bar 22 my responsibilities were too run a full service a la carte restaurant. I was responsible for the complete Food and Beverage operating system. I trained the kitchen staff implemented all policies and procedures. I was responsible for cost control of the menu, menu development and the overall cleanliness of the kitchen concerning sanitation, SERV Safe practices and implementation of those policies. 2. April 1990 to July 2003

restaurant it was an upscale fine dining restaurant, which i called New American Fare with a Country French Influence. The restaurant was a success from the start. Honestly I couldn't cook the food fast enough. In the first year of our opening there was a continuous line out the door that created a lot of buzz in the community and really established Hudson Place as one of the finest gourmet restaurants in Montclair, NJ. Two years after the restaurant was opened I was reviewed by the New York Times and received a Two Star rating as one of the best A La Carte Restaurants in Northern New Jersey. In 1991 New Jersey Monthly Magazine reviewed my restaurant and I was considered as one of the newest rising stars on the New Jersey restaurant scene.
