Biography
David Derewicz is a passionate 35+ year hospitality industry professional with a proven track record of increasing sales, decreasing costs, skilled at staff retention and management development. For 15 years he presided as General Manager for The Prime Rib Inc. For two years he managed restaurants for Ruth’s Chris Steak House at the Pikeville, MD location as well as the Water Street restaurant and concurrently the Havana Club; an upscale nightclub owned by the same company. In these roles, David was responsible for all areas of operation including budget, P&L accountability, food and beverage purchasing, recipe adherence, marketing, staff recruitment and training, and the financial management of this 4.8 million/yr. award winning, fine dining concept.
In his tenure, David has demonstrated superior leadership, organizational, and customer service skills. He is driven to motivate and educate a staff to attract and retain a solid and growing customer base. This has resulted in a proven track record of substantial increases in bottom-line profitability. Most notably, during the economic downturn, through proactive innovation and aggressive marketing, he was able to avoid annual sales losses, and showed consistent growth in 2009 and thereafter.
His product knowledge and insight spans liquors and wines, continental and multiple cuisines, service techniques and POS system operations. He exhibits well-developed interpersonal skills, stresses the importance of a safety-conscious team-oriented approach with staff, and reacts fast and adequate to trends and market conditions.
He managed staff teams of 80+ employees, including 4 managers; all direct reports.
