ABOUT ME

I am Vikendra Dabash from India. Ph.D. in Food Technology was obtained at Tomas Bata University in Zlin, Czech Republic, with the topic Effect of Enzyme on the Rheological Properties of Gluten-Free Dough and Bread on 07/04/2022, the Master's degree in Food Science and Technology: with a specialization in food packaging at the Institute of Food Technology, Bundelkhand University Jhansi, India on 09/07/2009 and the graduation in Biology and Chemistry at CCS University, Meerut, India on 30/06/2003. During my master’s and doctoral studies, I spent three months as a research exchange student in the Food engineering and packaging laboratory under the supervision of Dr. Subanandan Sabhapathy at the Defense Food Research Laboratory in Mysore, India, and four months in the Department of Food Processing and engineering under the supervision of the Prof. Uwe Grupa at University of Applied sciences Fulda Germany respectively. Recently until 30/06/2023, I was working as a post- doctoral researcher at REQUIMTE LAQV/FFUP focusing primarily on the processing effect of food allergens. Moreover, I am passionate about Food rheology, texture analysis, processing, R&D, new product development, structure, sensory, Nutrition, quality, and packaging. More than seven of my articles have been published in peer- reviewed international journals. I have presented three papers at international scientific conferences and have been more than six oral presentations between universities and departments. WORK EXPERIENCE
