I manage the “Cold Line” which is all of the Salads and Desserts. I am required to prepare and set up my station. As “Garde Manger” I oversee and make sure that everything is ready and prepared for dinner service. We serve over 300-500 covers per night. I also am required to work the “Fry” station which includes filtering and cleaning the fryer on a daily basis.
