Oct 2018 - Aug 2020. 760-***-**** I was recruited by this Four-Diamond hotel with 410-room to oversee the 110-member Food and Beverage team By leading our team to aggressively pursue its production targets, we secured $9M annually and elevated bar sales by 25% and lunch sales by 22%. We also achieved a 78% guest satisfaction score (104% of goal) by training the team to rapidly resolve complex issues and ensuring the consistent provision of exceptional service. Created enhanced incentives for the Catering team resulting in an 18% increase in wine sales, decreasing food cost by 16% through the design of new menu items that utilized similar ingredients, and growing pool cabana revenues by 100% with the creation of new food and beverage package mixes. May 2017 – Sept 2018 602-***-**** A 4-diamond, luxury boutique hotel of 263 rooms, 21,000sq. ft. of meeting space hosting high profile sports & entertainment and high-end social market events was the property’s main source of business which was a $6 million in revenue operation. Lead a team of one manager, six captains and over 40 hourly associates. Ordered all alcohol for the entire hotel. Raised the company’s meeting planner’s satisfaction by 25 points. John Q Hammons Hotels dba Embassy Suites Hotel & Spa. Albuquerque, NM. March 2016 – March 2017 Albuquerque’s busiest hotel with an occupancy for the year of 78%. Duties included forecasting food & beverage revenues, on the floor overseeing complimentary breakfast, Manager-on-Duty shifts, reviewing labor schedules on a daily and weekly basis, and addressing Human Resources issues. Conducted monthly inventories and P&L reconciliations. $10 million in food & beverage revenue. Created a Site Inspection SOP that assisted in taking more business from the comp set. Implemented training program for all outlets to improve service delivery. Made a frequent guest amenity program which resulted in 20 points higher guest satisfaction. Large conventions and Sports & Entertainment were the main markets for hotel. Primary duties were overseeing Catering & Convention Services Managers, forecasting revenues, servicing large, high profile conventions and events. $14 million in catering revenue property. Primary group corporate and association convention hotel. Oversaw a team of six managers and one assistant. Assisted operations team on NFL Sunday game days as well as NHL game days as both Arizona teams’ stadiums were adjacent to property. Sept. 2008 – April 2012 602-***-**** Arizona’s 3rd largest 4-diamond resort of 740 two-room suites along with 120,000sq. ft. of meeting space. Primary business is high-end, large corporate conventions along with leisure business due to the resort’s golf course, spa and 17-acre waterpark. $16 million in Banquet revenue for the property. Oversaw a staff of six managers, twelve supervisors and 120 associates. Monthly Profit & Loss reconciliation. Duties included those of Food & Beverage Director Represented department at Site Inspections. Met daily with clients to ensure we were exceeding their expectations.
