Overseeing my staff and making sure they had what they needed to do their jobs efficiently and productively. Keeping communication open. I have systems for everything. Systems are so important in every area of a restaurant. It is so important I build strong relationships with the staff. The systems and checklists I put in place ensures the employees are performing their duties properly and they are getting daily tasks done. Letting me know and document what is and isn’t being done and or correctly. I can then address.

I saw to the scheduling-hiring-firing, inventory, ordering, allowance budgets for kitchen, and keeping my systems I have put in place to work for the better of the value of our brand and many more things ensuring a top quality product and customer service experience.

Having a general knowledge of labor laws, health codes, safe food handling and sanitation, responsible alcohol service, safety and security systems and procedures, & computer operations as well.

I’ve served, I’ve bartended, even bussed tables and washed dishes during those extremely busy times. Helping wherever help is needed. I need to demonstrate to my employees I work just as hard as them and throw myself into the pits with them! That rush that we in the industry know how overwhelming it can be. Showing and demonstrating how to keep professional and calm and get the job done right while still maintaining our quality of food and service. It’s my job to lead by example because in those times are where mistakes get made and mistakes cost money. Now of course mistakes will happen. It’s inevitable. I sometimes look at it as mistakes are gifts. We can learn from mistakes. Teachable moments for everyone. Probably not going to do that again are you. Being said that we most certainly need to try our best to aim just aim for perfection.

It’s our responsibility to make every patron that walks through them doors have the best quality service, food and experience, and for everyone leaving to be happy and a returning patron. A patron that had such wonderful quality of service they go tell their friends! No one should ever leave unhappy. If one of my staff feels a customer is not satisfied I want them to come tell me so I can find out why. I may be able to fix whatever it is. So If I can get my team to do that I am doing my job.

Although in this business we know we can’t please everyone. That is merely impossible sometimes. There will always be those couple unsatisfied customers no matter what. It could just be their personality. No matter what their personality, we don’t change ours. I have turned one of those “people”. This particular ornery gentleman came in extremely grumpy and dissatisfied before he had even been sat. After I have had some time with him, and by the end of his experience dining he had walked out with a smile. We can change someone’s day! We are so much more then just servers that bring people food. We are their entire experience from the time we greet them until the time we give them our most genuine & heartfelt thank you at the end of their time with us.

Their experience I like for my staff to not just serve them kindly but to exceed their expectations. I love to mentor my staff on just how to do this. They love learning as it puts generally 5.8% more of a tip in their pocket and returns customers.

I have been in many different settings before my last position as well before the owner passed away from my management roll and I have enjoyed every experience along the way throughout the past 24 years. I started bartending when I was 18. I was asked for a Morgan and coke. I had no clue what that was. If only they had said Captain and coke I would have understood. I laugh to this day about oh how much I had to learn. I have come quite a long way from that 18 year old who had much to learn. I still keep learning. Trying to improve my management skills wherever I possibly can. Everyone wins when I win. Along the way from my 18 year old self I have been at a couple supper clubs, Italian steak houses, some more laid back patio relaxed service setting’s. I’ve had tons of experience dealing with this fast paced competitive yet fun business. I’ve meet people from all walks of life. I’ve always enjoyed my job anywhere I was in all my years and I couldn’t see myself doing anything else. Mingling with new people. It’s like getting paid to go have fun. Sit behind a desk and push pencils and deny claims. Nah, I’ll pass. Work should be fun and enjoyable. I am a great leader giving my team the tools they need to succeed. When they succeed I succeed. When I succeed the brand succeeds and I’ve done my job!

No I don’t possess a fancy degree of any sort, making me less qualified than a candidate with a that piece of paper perhaps but what I do have is experience and the knowledge to keep on learning and improving my leadership roll. I know how to interact with people with all different kinds of personalities and possess qualities a piece of paper just can’t give anyone. 200 years ago a doctor didn’t go to school. They figured it out.
