Recruited by an old colleague to assist the Medical Center in the final stages of transition
from contract management to self op. My primary role was to facilitate a positive cultural
transformation within the department. Worked closely with Department Director to direct
all food service operations of this812 bed teaching hospital. including: patient services,
catering, two self op retail operations, and five franchise locations. Accomplishments
include:
Human Resource Management: 60 percent of time spent coaching, counseling, and mentoring to bring about behavioral change in hourly staff and management team. This lead to a significant positive shift in the department’s culture.
Strengthened management team and hourly staff through series of team
building activities, training programs and reward/recognition
Restructured job flows using “LEAN” process resulting in increased
efficiency and overall reduction in FTEs.
Collaborated with Director of Clinical Nutrition and members of the Information Technology Department to streamline diet orders from 208 overly restrictive diets to 82 evidence-based diets. This project resulted in a $54,173/yr. cost savings.
All operations managed within budgetary guidelines and regulatory agency requirements.

During my employment with Marriott I opened and managed all operations of the hospital’s New Direction Weight Management Center which provided multidisciplinary treatment for the morbidly obese. Provided individual and group nutritional counseling to this select population. In coordination with psychologist and physician monitored progress and medical status.
1980-1990 Business Owner/Consultant Dietitian: Therapeutic Diet Associates and Professional Nutrition Services Inc.
Worked with multidisciplinary teams of physicians and psychologists to assess, treat and monitor nutritional care of patients with a variety of medical conditions. These included those with anorexia, bulimia, binge eating disorders; high risk pregnancy, pediatrics, diabetes, cardiac disease and renal failure. Also provided group counseling, developed educational materials and promoted healthy eating thorough speaking engagements and media events.
