Title: “Study of Gamma aminobutyric acid (GABA) producing probiotic Lactic acid bacteria”.

• Research was mainly focused on production of GABA from LAB.

• Production of GABA was enhanced in soymilk compared with synthetic media

(MRS) by conducting optimization studies.

• Experimental data was authenticated by RSM and ANN models.

• GABA was identified by using HPLC and conformed by LCMS determining the molecular weight.

• Characterization of GAD enzyme was performed by extraction and purification of GAD enzyme and estimated the protein activity.

• Stability studies was performed to determine the production of GABA by LAB under stress conditions.
