Resume:

I am delighted to present Dennis Batts for the Management position. Dennis comes with over 20+ years in upper management with the restaurant industry. Versing from fast food, fast casual, to full-service dining. Dennis was most recently a Multi-Unit Operations Manager for Hook & Reel a full-service Cajun-inspired restaurant. With Hook & Reel, Dennis started as a General Manager after a very successful new store opening (2-3 months later) he became a Multi-Unit Training General Manager. When Dennis started with the company there were 10 locations, he helped grow the company to 90. Once Dennis became a multi-unit manager, he was overseeing 12 stores in North Carolina, South Carolina, Georgia, and Florida. Dennis executed 20-25 new store openings with Hook & Reel where he developed teams and managers, followed up with teams and managers, implemented standards, set up systems, initiated marketing, performed signage, executed a 5-day training program, and more. The average sales volume between each one of Dennis's locations was $3-6M/year and had a total of 400 employees. Dennis set up standards and procedures for the employees and managers. Dennis, additionally trained managers on P&Ls, cost of sales, food costs, inventory tools, onboarding, pos systems, etc. The average food cost between his stores was 31-32% and average labor costs were 6-9%. He kept these costs down by previewing the manager's schedules looking for outliers, reviewing nightly reports, comprehending the labor and food costs, and following up with customer complaints.

Before Hook & Reel, Dennis was General Manager for Noodles & Company where he was also a new store opening General Manager. He later became a Training General Manager. The sales volume averaged between 1.2-1.8M/year and he led a team of 20+ employees. He has personally trained and developed 5 other General Managers. He trained them in all back-of-house procedures, expediting, recipes, ticket times, inventory control, food and labor costs, and company standard techniques. He kept costs under control by reviewing the prior month's sales for scheduling and understanding the trends of business. Dennis is a firm believer in understanding his customer base and the community around him for forecasting. He believes training and development of these techniques will always play a role in keeping food and labor costs low while increasing sales.

Dennis also has an abundance of back-of-house management coming to Noodle from Chili's as a Kitchen Manager. Here he was able to set pars, manage prep sheets, line checks, control maintenance, etc.

Currently, Dennis is looking for a Regional or General Management position. Hook & Reel has downsized and discontinued his position in the Southeast, they asked him to move to New York to continue his career with them but he was unable to. He understands he is taking a step down but acknowledges there are not many multi-unit opportunities in Greenville and that is where he wants to be. He is asking for a base salary of $70k plus and is available for an initial interview anytime next week. Thank you.
