Adjusted staffing and inventories in conjunction with challenging seasonal sales due to location. ●Entertainment complex encompassing 50,000 square feet featuring two restaurants, banquet facilities and a million dollar game room. The majority of focus was spent in Trophy Room, which is the more formal dining area featuring steaks, seafood and pastas. Responsible for scheduling a staff of 45 - 55 servers, food and liquor costs control, maintaining high food and beverage standards by effectively working with staff on a daily basis. Constant focus on daily and weekly P/L sheets to achieve a profitable business operation.
